Ever since the Middle Ages the Dutch have drained long narrow strips of land in the wet, low-
lying country and laid straight canals in between. This system of reclaiming land is unique in
the world and created the landscape of Holland today: a geometrical pattern of either green
grass dotted with black and white cows, or colourful bulb fields, with farms, windmills and
pollarded trees on the horizon.
